


Ingredients:
Green Side
1/4 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 teaspoon vanilla extract
Green food coloring
1 large egg
1/4 teaspoon baking powder
1/8 teaspoon salt
3/4 cup all purpose flour
Chopped mint chocolates or mint chocolate chips (about 1-2 oz.)
Chocolate Side
1/4 cup unsalted butter, softened
1/2 cup granulated sugar

3 tablespoons unsweetened cocoa powder
3/4 cup all purpose flour
Chopped mint chocolates or mint chocolate chips (about 1-2 oz.)
Instructions:
Green side: In a large mixing bowl, using a mixer on medium speed, beat together butter, sugar, vanilla and green food coloring until creamy - about 1-2 minutes. Beat in egg until well combined. Sift in baking powder, salt and flour, and mix until just combined. Stir in chocolate until combined.
Chocolate side: In a large mixing bowl, using a mixer on medium speed, beat together butter, sugar, vanilla until creamy - about 1-2 minutes. Beat in egg until well combined. Sift in baking powder, salt, cocoa and flour, and mix until just combined. Stir in chocolate until combined.
Press the doughs together on plastic wrap to form a log. Wrap in plastic wrap. Chill for 1 hour or overnight.
Heat oven to 350 degrees F.
Slice logs into 1/4-inch thick rounds, place on cookie sheets, and bake for 10-15 minutes, or until golden around edges and crisp. Cool 1 minute before transferring to wire racks to cool completely.

DeleteCashew's white paws are so cute! How sweet of Eric to bring this little guy home for you :) Our cats watch TV like that too. Sounds like you have a little troublemaker on your hands. No matter how many bad things they do, you can't help but love them. I wish I could squeeze him!
