Chocolate Almond Cookies (Gluten Free!)

Ingredients:
1/2 cup pureed sweet potatoes
3/4 cup confectioners' sugar
3 tablespoons almond butter
1 large egg
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon baking soda
3/4 cup almond flour
1/2 cup unsweetened cocoa powder
Chocolate chips and almonds (optional)

Instructions: 
Heat oven to 350 degrees F.  Coat cookie sheets with cooking spray or oil.

In a large mixing bowl, using a mixer on medium speed, beat together sweet potatoes, confectioners' sugar, almond butter, egg, vanilla, almond extract and baking soda until well combined and smooth.  Beat in almond flour and cocoa powder until well combined.  Drop heaping tablespoons of dough onto cookie sheets.  Press chocolate chips and almonds into dough.  Press dough dough to flatten, with damp hands (if desired), for flatter cookies.

Bake 15 minutes or until risen and slightly crisp.  Cool 2 minutes before transferring to wire racks to cool.

Makes about 10 large cookies

  1. Hmmm...SPP just can't seem to stop eating the gluten. He avoids it all week and then goes a little crazy on weekends, which means his stomach never seems to be 100% normal. I think we both know he shouldn't eat the wheat, but he just has to have his cakes and cookies and pies and there just isn't enough GF stuff around when he wants it. So I got very excited seeing GF cookies in the title of this post. The only problem is he hates sweet potatoes (He is Sir Pickypants after all) . Do I dare sneak these past him? They look awfully good to me.

    1. That would be incredibly difficult to go gluten free. I feel for him. I don't think these have a sweet potato flavor. As long as you puree them really well, I doubt he'd know.
