Ingredients:
  • 1 1/2 cups heavy whipping cream 
  • 1/3 cup confectioners' sugar 
  • 1 teaspoon vanilla extract 
  • 1/3 cup chocolate chips 
  • 1 tablespoon heavy whipping cream 
  • 1 tablespoon corn syrup 
  • 12 ice cream sandwiches 
  • 1/3 cup caramel syrup (optional) 
  • 1/3 cup chopped toasted nuts (peanuts, pecans, almonds, etc.) 
  • 1/3 cup chopped pineapple 
  • 1/3 cup maraschino cherries (or more!) 
  • 1 banana, thinly sliced 
Instructions:
 In a large mixing bowl, using a mixer on high speed, beat together cream, confectioners' sugar and vanilla until stiff peaks form; set aside. 

In a small microwave-safe bowl, melt together chocolate chips, 1 tablespoon cream and corn syrup, stirring frequently until melted and smooth (about 1 minute).

Line ice cream sandwiches in an 8x8 baking dish, cutting sandwiches if necessary.  Spread 1/3 of the whipped cream on top.  Drizzle with half of the chocolate sauce and caramel sauce; sprinkle with half of the nuts.  Top with remaining ice cream sandwiches.  Spread remaining whipped cream on top.  Drizzle with remaining chocolate sauce and caramel sauce; sprinkle with remaining nuts.  Sprinkle pineapple, cherries and banana on top.  Cover and freeze until ready to serve.

  2. Ha Ha. Yes, there is something so compellingly good about bad food. But let's face it, that kind of food is engineered to make you want it. KFC hits all of the right spots in our brain. Oh how I love it!

    I love how you make the redneck ice cream cake with ice cream sandwiches, but you use real whipped cream!

      Haha thanks for calling me out! I agree. It's kind of a white trashy dessert. I tried to make it a little classy though!

  5. Hi Emily, I used to love Carvel Flying Saucers when I was a kid -- their round version of ice cream sandwiches. Once I put whipped cream and fudge sauce on (both from cans) and thought it was the best thing ever. I'd do it again in a heartbeat, only with fresh whipped cream and a coffee-fudge sauce. Thanks for a great memory!

  7. I love the idea of an icecream cake made with icecream sandwiches - what's not to like about layers of icecream and biscuit. KFC is like that, tastes good then makes you feel not so good.

  11. I love ice cream sandwich cake. In fact, I've been craving it lately. Have ever thought about incorporating Bailey's into an ice cream sandwich cake? That thought just occurred to me after scrolling and seeing your latest Bailey's creations and landing on this. Maybe an ice cream sandwich cake with Bailey's flavored whipped cream?
