


Ingredients
- 2 1/4 cups cake flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1 large mashed banana
- 1/2 cup milk
- 1/4 cup melted coconut oil
- 1 large egg
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 1/2 cups blueberries
- 1/4 cup cold unsalted butter
- 1/2 cup cake flour
- 1/3 cup brown sugar
Heat oven to 350 degrees F. Line 12 muffin cups with paper liners.
In a medium mixing bowl, sift together flour, baking powder, baking soda, salt and cinnamon. In a large mixing bowl, whisk together mashed banana, milk, oil, egg, sugar and vanilla until well combined. Gradually fold in flour mixture until barely combined. Fold in berries until just combined. Divide batter into muffin cups.
To make the streusel, in a medium bowl, using fingertips or a pastry blender, blend together butter, flour and brown sugar until combined and mealy. Sprinkle streusel on top of muffin batter. Bake 20-25 minutes or until well risen and golden brown. Cool 5 minutes before transferring to wire racks to cool.
Makes 1 dozen muffins

DeleteTwo of the best kinds of muffins in one. I like that you use coconut oil in them too. I try hard not to use processed oils in baked goods, but occasionally butter isn't the best choice.
ReplyDeleteI love watching My Cat From Hell too. I think my mother needs that guy. I wonder what he would have thought of the cat I had as a teenager, Puddlegum, who LOVED having his belly rubbed. Seriously, he was like a dog in that respect. He'd submit to a belly rub and fall asleep on his back.
Hi Rachel, I do like using oils in muffins. It seem to keep them moist. Does your mom have a cat from hell?? Haha Puddlegum. That's a great name! The belly is the softest part of the cat. :)
DeleteYes. Her cats are okay individually, but they hate each other and take it out on all sorts of unsavory ways. They need help getting along. Puddlegum is a bit of a bastadization of Puddleglum the Marsh Wiggle in the Chronicles of Narnia.

DeleteYou can usually get catnip kits at pet stores. Or try catgrass or catmint. Catmint has beautiful purple flowers - bonus! It's easy to dry and kitties love it. For noodles, it's not authentic thai, but thai-inspired and tasty: peanut butter + chili oil + fish oil + water + lime + ginger + garlic + sometimes a pinch of sesame oil over cold Udon or Soba noodles. Yum!
ReplyDeleteWell, that's a good idea. My mom gave me some seed for nip. I need to plant it. Hopefully it's not too hard to grow. I saw catmint at a greenhouse a few months ago! I should have bought it. That sounds really good and perfect for summer. I've been craving cold noodles and pasta salad. Do you use fish sauce? Everytime I try to make a Thai dish it ends up tasting horribly wrong. I think maybe I add too much peanut butter.
