


Ingredients:
1 1/2 cups all purpose flour
2 tablespoons dark unsweetened cocoa powder
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/4 cup unsalted butter, softened
1/2 cup Trader Joe's Cookie & Cocoa Swirl
1/3 cup brown sugar
1/2 teaspoon vanilla extract
1/4 cup ground cinnamon
1 large egg
1/3 cup cinnamon chips
Instructions:
Heat oven to 350 degrees F.
In a medium bowl, sift together flour, cocoa powder, baking soda, baking powder and salt. In a large mixing bowl, using a mixer on medium speed, beat together butter, Cookie & Cocoa Swirl, brown sugar, vanilla and cinnamon until creamy and well combined. Beat in egg until well combined. Reduce mixer speed to low and beat in flour mixture until just combined. Stir in cinnamon chips until well combined.
Drop rounded spoonfuls of dough onto cookie sheets, spacing about an inch apart. Bake 12 minutes or until set. Cool 2 minutes before transferring to wire racks.
Makes about a dozen cookies

DeleteI can't believe after all these years of baking, I still haven't bought and used cinnamon chips. Maybe this fall will be the time and these cookies sound like a good starting point. ;)

DeleteI LOVE cinnamon chips! They're super hard for me to find, so when I do I always stock up on multiple bags. I love that you combined them with cookie butter and chocolate too. :)

DeleteWow those look good...I've never been to Trader Joe's but seeing those cookies is the best reason I can think of to go. I love Hershey's dark cocoa powder too - I use it a lot for making smoothies.
