



2 cups all purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
2/3 cup granulated sugar
1/3 cup oil (I used olive)
1 large egg
1 teaspoon vanilla extract
3/4 cup plain Greek yogurt
1 cup blueberries
Heat oven to 350 degrees F. Grease and flour a 12 cup muffin pan.
In a medium bowl, sift together flour, baking soda and salt. In a large mixing bowl, whisk together sugar, oil, egg and vanilla until well combined. Whisk in yogurt until combined. Stir in dry ingredients until just combined.
Divide half of the batter into muffin cups. Top with blueberries. Cover the blueberries with the remaining batter. Bake 15-18 minutes, or until light golden brown on top. Cool for a few minutes before transferring muffins to a wire rack.
Makes 12 muffins
These blueberry muffins look delicious Emily. Protein muffins sound like a great idea too. Chocolate and banana are a great combo (maybe even chocolate + mint w/ St. Patty's Day coming up).
